  • 1 pork tenderloin (about 1.5-2 lbs)
  • 2 tablespoons olive oil, divided
  • 2 cups fresh spinach, roughly chopped
  • 1 cup mushrooms, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Toothpicks or kitchen twine for securing

Instructions

  • 1.Preheat your oven to 375°F (190°C). Butterfly the pork tenderloin by slicing it down the middle, not all the way through, and open it like a book. Flatten it out to an even thickness using a meat mallet.
  • 2.Heat 1 tablespoon of olive oil in a skillet over medium heat. Add garlic, mushrooms, and spinach, cooking until the spinach is wilted and the mushrooms are soft. Remove from heat, let it cool slightly, then mix in feta cheese and oregano.
  • 3.Spread the filling evenly over the tenderloin, leaving a small border around the edges. Roll the tenderloin tightly, secure it with toothpicks, or tie it with kitchen twine.
  • 4.Heat the remaining olive oil in a skillet over medium-high heat. Sear the tenderloin on all sides until golden brown, about 2-3 minutes per side.
  • 5.Transfer the seared tenderloin to a roasting pan and place it in the oven. Roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  • 6.Let the tenderloin rest for 10 minutes before slicing. Remove toothpicks or twine, cut into rounds, and serve.
  • 7.Serve this Stuffed Pork Tenderloin as the centerpiece of your Mother's Day dinner, accompanied by your favorite keto-friendly sides, to show your love and appreciation through the joy of a shared meal.
