  • 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz ham, diced
  • 8 oz Swiss cheese, shredded
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  • 1.Preheat your oven to 375°F (190°C).
  • 2.In a large skillet, melt the butter over medium-high heat.
  • 3.Add the diced chicken pieces to the skillet and cook for about 5-7 minutes until they are browned and cooked through. Remove the cooked chicken from the skillet and set it aside.
  • 4.In the same skillet, add the diced ham and sauté for about 2-3 minutes until it starts to brown slightly.
  • 5.Return the cooked chicken to the skillet with the ham and stir to combine.
  • 6.In a separate bowl, whisk together the heavy cream, chicken broth, Dijon mustard, garlic powder, salt, and black pepper.
  • 7.Pour the cream mixture over the chicken and ham in the skillet. Stir to combine.
  • 8.Sprinkle the shredded Swiss cheese evenly over the top.
  • 9.Transfer the skillet to the preheated oven and bake for about 20-25 minutes until the casserole is hot and bubbly, and the cheese is melted and golden.
  • 10.If desired, garnish your Keto Chicken Cordon Bleu Casserole with chopped fresh parsley for added flavour and presentation.
  • 11.Serve hot as a delightful and keto-friendly dinner.
