- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 2 cups fresh spinach leaves
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons cream cheese
- 1/2teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 8 ounces cooked and drained keto-friendly fettuccine or spiralized vegetables
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- 1. Season the thinly sliced chicken breasts with salt and black pepper.
- 2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side until they are cooked through and golden brown. Remove the chicken from the skillet and set aside.
- 3. In the same skillet, add the fresh spinach leaves and minced garlic. Sauté for about 2-3 minutes until the spinach wilts.
- 4. Pour in the heavy cream, grated Parmesan cheese, cream cheese, Italian seasoning, and red pepper flakes (if using). Stir to combine and let the sauce simmer for about 3-4 minutes, allowing it to thicken.
- 5. Return the cooked chicken to the skillet and toss it in the creamy Alfredo sauce. Cook for an additional 2-3 minutes to heat the chicken through.
- 6. Serve your Keto Chicken and Spinach Alfredo over cooked keto-friendly fettuccine or spiralised vegetables.
- 7. Garnish with chopped fresh parsley if desired.
