  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 bunch fresh asparagus spears, trimmed and cut into bite-sized pieces
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • Salt and black pepper to taste
  • Red pepper flakes (optional, for heat)
  • Chopped green onions for garnish (optional)

Instructions

  • 1.In a small bowl, mix together the soy sauce, sesame oil, and grated fresh ginger to create the stir-fry sauce. Set it aside.
  • 2.Heat the olive oil in a large skillet or wok over medium-high heat.
  • 3.Add the minced garlic and sauté for about 30 seconds until fragrant.
  • 4.Add the sliced chicken to the skillet and stir-fry for approximately 5-7 minutes until it's cooked through and no longer pink. Remove the cooked chicken from the skillet and set it aside.
  • 5.In the same skillet, add the asparagus and red bell pepper. Stir-fry for about 5-6 minutes until the vegetables are tender yet still crisp.
  • 6.Return the cooked chicken to the skillet with the vegetables.
  • 7.Pour the stir-fry sauce over the chicken and vegetables. Stir well to coat everything evenly. If desired, add red pepper flakes for extra heat.
  • 8.Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients.
  • 9.Season with salt and black pepper to taste.
  • 10.Garnish your Keto Chicken and Asparagus Stir-Fry with chopped green onions.
  • 11.Serve hot as a delicious and keto-friendly dinner.
