- 1 pound boneless, skinless chicken breasts, thinly sliced
- 1 bunch fresh asparagus spears, trimmed and cut into bite-sized pieces
- 1 red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- Salt and black pepper to taste
- Red pepper flakes (optional, for heat)
- Chopped green onions for garnish (optional)
Instructions
- 1.In a small bowl, mix together the soy sauce, sesame oil, and grated fresh ginger to create the stir-fry sauce. Set it aside.
- 2.Heat the olive oil in a large skillet or wok over medium-high heat.
- 3.Add the minced garlic and sauté for about 30 seconds until fragrant.
- 4.Add the sliced chicken to the skillet and stir-fry for approximately 5-7 minutes until it's cooked through and no longer pink. Remove the cooked chicken from the skillet and set it aside.
- 5.In the same skillet, add the asparagus and red bell pepper. Stir-fry for about 5-6 minutes until the vegetables are tender yet still crisp.
- 6.Return the cooked chicken to the skillet with the vegetables.
- 7.Pour the stir-fry sauce over the chicken and vegetables. Stir well to coat everything evenly. If desired, add red pepper flakes for extra heat.
- 8.Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients.
- 9.Season with salt and black pepper to taste.
- 10.Garnish your Keto Chicken and Asparagus Stir-Fry with chopped green onions.
- 11.Serve hot as a delicious and keto-friendly dinner.
