Ingredients
- 4large lettuce leaves (such as iceberg or Romaine)
- 4 large eggs
- 4 strips of bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- 1/4 cup diced bell peppers (any color)
- 2 tablespoons sour cream (optional)
- Salt and black pepper to taste
- Cooking oil or butter for frying eggs
Instructions
- 1. Wash and dry the lettuce leaves. These will be your taco shells. Set them aside.
- 2. In a skillet over medium heat, add a small amount of cooking oil or butter. Crack the eggs into the skillet and cook them to your preferred doneness, whether it's sunny-side-up, scrambled, or over-easy. Season with salt and black pepper.
- 3. Lay out the lettuce leaves flat. Place one cooked egg in each lettuce leaf. Top with crumbled bacon, shredded cheddar cheese, diced tomatoes, diced onions, and diced bell peppers.
- 4. Add a dollop of sour cream on top of each taco if desired.
- 5. Carefully fold the lettuce leaves over the toppings to create a taco shape. Serve your Keto Breakfast Tacos with Lettuce Wraps immediately.
