Ingredients

  • 4large lettuce leaves (such as iceberg or Romaine)
  • 4 large eggs
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers (any color)
  • 2 tablespoons sour cream (optional)
  • Salt and black pepper to taste
  • Cooking oil or butter for frying eggs

Instructions

  • 1. Wash and dry the lettuce leaves. These will be your taco shells. Set them aside.
  • 2. In a skillet over medium heat, add a small amount of cooking oil or butter. Crack the eggs into the skillet and cook them to your preferred doneness, whether it's sunny-side-up, scrambled, or over-easy. Season with salt and black pepper.
  • 3. Lay out the lettuce leaves flat. Place one cooked egg in each lettuce leaf. Top with crumbled bacon, shredded cheddar cheese, diced tomatoes, diced onions, and diced bell peppers.
  • 4. Add a dollop of sour cream on top of each taco if desired.
  • 5. Carefully fold the lettuce leaves over the toppings to create a taco shape. Serve your Keto Breakfast Tacos with Lettuce Wraps immediately.
