- 2large eggs
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup shredded cheddar cheese
- 2 slices cooked bacon, crumbled
- 1 tablespoon butter or cooking oil
- Salt and pepper to taste
- Optional toppings: sliced avocado, salsa, sour cream, chopped fresh cilantro
Instructions
- 1. In a skillet, melt the butter or heat cooking oil over medium heat. Add the diced bell peppers and onions. Sauté for 2-3 minutes until they start to soften.
- 2. Push the sautéed vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs with a spatula, incorporating them with the sautéed veggies. Cook until the eggs are no longer runny, stirring occasionally.
- 3. Transfer the scrambled eggs and sautéed vegetables to a serving bowl. Top with diced tomatoes, shredded cheddar cheese, and crumbled bacon.
- 4. Season the Keto Breakfast Burrito Bowl with salt and pepper to taste.
