- 1pound ground beef
- 2 medium zucchinis, diced
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced bell peppers (any color)
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 cup chopped fresh cilantro (optional)
- Salt and black pepper to taste
- Lime wedges for garnish (optional)
- Sliced avocado for garnish (optional)
Instructions
- 1. Dice the zucchinis into small pieces and set them aside.
- 2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until they become fragrant and translucent.
- 3. Add the ground beef to the skillet and cook, breaking it apart with a spoon, until it's browned and cooked through. Drain any excess fat if necessary.
- 4. Stir in the diced bell peppers, diced tomatoes, diced zucchinis, chili powder, cumin, salt, and black pepper. Cook for an additional 5-7 minutes, allowing the vegetables to soften and the flavors to meld.
- 5. Once the beef and vegetables are cooked, remove the skillet from heat. Garnish with chopped fresh cilantro, lime wedges, and sliced avocado if desired.
