  • 1pound ground beef
  • 2 medium zucchinis, diced
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced bell peppers (any color)
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and black pepper to taste
  • Lime wedges for garnish (optional)
  • Sliced avocado for garnish (optional)

Instructions

  • 1. Dice the zucchinis into small pieces and set them aside.
  • 2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until they become fragrant and translucent.
  • 3. Add the ground beef to the skillet and cook, breaking it apart with a spoon, until it's browned and cooked through. Drain any excess fat if necessary.
  • 4. Stir in the diced bell peppers, diced tomatoes, diced zucchinis, chili powder, cumin, salt, and black pepper. Cook for an additional 5-7 minutes, allowing the vegetables to soften and the flavors to meld.
  • 5. Once the beef and vegetables are cooked, remove the skillet from heat. Garnish with chopped fresh cilantro, lime wedges, and sliced avocado if desired.
  • 6. Serve your Keto Beef and Zucchini Skillet hot as a flavorful and low-carb dinner option.
