- 1 pound fresh asparagus, trimmed and chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Chopped fresh chives for garnish (optional)
Instructions
- 1. In a large pot or saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
- 2. Add the chopped asparagus to the pot and continue to sauté for an additional 5 minutes, stirring occasionally.
- 3. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Allow it to simmer for about 15-20 minutes or until the asparagus is tender.
- 4. Use an immersion blender or transfer the soup to a regular blender (in batches if needed) and blend until smooth.
- 5. Return the blended soup to the pot and place it over low heat.
- 6. Stir in the heavy cream and season the Creamy Asparagus Soup with salt and black pepper to taste.
- 7. Allow the soup to simmer for an additional 5 minutes, stirring occasionally. Just before serving, sprinkle grated Parmesan cheese over each serving. If desired, garnish with chopped fresh chives for added flavor and presentation.
