In a large skillet or pan, heat the ghee or butter over medium-high heat.
Add the chopped onion and sauté until it becomes translucent, about 2-3 minutes.
Stir in the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
Add the tomato paste and continue to cook, stirring, for about 2 minutes to cook off the raw taste of the tomato paste.
Season the chicken pieces with salt and black pepper. Add them to the skillet and cook until they are browned on all sides, about 5-7 minutes.
Reduce the heat to medium-low and add the heavy cream, Greek yogurt, garam masala, ground turmeric, ground cumin, paprika, and chili powder. Stir well to combine all the ingredients.
Simmer the mixture for about 10-15 minutes, allowing the flavours to meld and the chicken to cook through. Adjust the seasoning with additional salt and black pepper if needed.
Garnish the Keto Butter Chicken with chopped fresh cilantro if desired.
Serve hot with cauliflower rice or keto-friendly naan for a satisfying and low-carb dinner.
