Mediterranean Chicken Skewers with Tzatziki Sauce

Ingredients
- For the Chicken Skewers:
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper to taste
- Wooden skewers, soaked in water for 30 minutes
- For the Tzatziki Sauce:
- 1 cup Greek yogurt (full-fat)
- 1/2 cucumber, grated and excess liquid squeezed out
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and black pepper to taste
Instructions
- Prepare Chicken Skewers:
- 1. In a bowl, combine the olive oil, dried oregano, dried thyme, paprika, salt, and black pepper. Add the cubed chicken and toss to coat. Let it marinate for at least 15 minutes.
- 2. Thread the marinated chicken pieces onto the soaked wooden skewers.
- 3. You can either grill the chicken skewers on an outdoor grill or cook them in a grill pan on the stovetop. Cook for about 5-7 minutes on each side until the chicken is cooked through and has grill marks.
- Make Tzatziki Sauce:
- 1. Grate the cucumber and squeeze out excess liquid using a clean kitchen towel or paper towels.
- 2. In a mixing bowl, combine the Greek yoghurt, grated cucumber, minced garlic, fresh lemon juice, chopped fresh dill, salt, and black pepper. Mix well to make the Tzatziki sauce.
- Serve:
- 1. Arrange the grilled Mediterranean Chicken Skewers on a serving platter.
- 2. Drizzle the homemade Tzatziki sauce over the chicken skewers or serve it on the side for dipping
- 3. Garnish with additional fresh dill, if desired.
