Prepare Stir-Fry Sauce:
In a bowl, whisk together the soy sauce (or tamari), rice vinegar, sesame oil, Swerve (or sweetener), minced ginger, minced garlic, and xanthan gum (if using). Set aside.
Prepare Stir-Fry:
In a large skillet or wok, heat the cooking oil over medium-high heat. Add the chicken strips and cook for about 5-7 minutes until they are no longer pink in the center. Remove the cooked chicken from the skillet and set it aside.
In the same skillet, add the sliced red and green bell peppers, broccoli florets, and snap peas. Sauté for about 5 minutes until the vegetables are crisp-tender
Return the cooked chicken to the skillet with the sautéed vegetables.
Pour the prepared stir-fry sauce over the chicken and vegetables. Stir well to coat everything evenly.
If you prefer a thicker sauce, let the stir-fry simmer for a few minutes until it thickens, or you can add a bit more xanthan gum.
Season the stir-fry with salt and black pepper to taste. Adjust the seasoning as needed.
Serve:
