For the Stir-Fry Sauce:
60ml soy sauce (or tamari for a gluten-free option)
2tbsp rice vinegar
1tbsp sesame oil
1tbsp Swerve (or your preferred keto-friendly sweetener)
1tsp minced fresh ginger
2 cloves garlic, minced
1/2tsp xanthan gum (optional, for thickening)
For the Stir-Fry:
1lb boneless, skinless chicken breasts, cut into strips
2tbsp cooking oil (such as avocado or coconut oil)
1 red bell pepper, sliced
1 green bell pepper, sliced
90g broccoli florets
100g snap peas
Salt and black pepper to taste
Sesame seeds for garnish (optional)
Chopped green onions for garnish (optional)

    Prepare Stir-Fry Sauce:

    In a bowl, whisk together the soy sauce (or tamari), rice vinegar, sesame oil, Swerve (or sweetener), minced ginger, minced garlic, and xanthan gum (if using). Set aside.

    In a large skillet or wok, heat the cooking oil over medium-high heat. Add the chicken strips and cook for about 5-7 minutes until they are no longer pink in the center. Remove the cooked chicken from the skillet and set it aside.

    In the same skillet, add the sliced red and green bell peppers, broccoli florets, and snap peas. Sauté for about 5 minutes until the vegetables are crisp-tender
