  • 2 medium zucchinis, grated
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 large egg
  • Salt and black pepper to taste
  • Cooking oil (such as olive oil or coconut oil) for frying

Instructions

  • 1. Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
  • 2. In a mixing bowl, combine the grated zucchini, almond flour, grated Parmesan cheese, chopped fresh parsley, minced garlic, and a large egg. Season with salt and black pepper to taste. Mix until all ingredients are well combined
  • 3. Heat a skillet or frying pan over medium heat and add a small amount of cooking oil to coat the bottom.
  • 4. Take a spoonful of the zucchini mixture and drop it into the hot skillet. Flatten it slightly with the back of the spoon to form a fritter. Repeat to make more fritters, leaving some space between them in the pan.
  • 5. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
  • 6. Place the cooked Low-Carb Zucchini Fritters on a paper towel-lined plate to drain any excess oil. Serve them hot as a delicious and low-carb snack or side dish.
