  • 2 medium zucchinis, cut into thin fry-like strips
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 2 large eggs
  • Salt and black pepper to taste
  • Cooking spray (olive oil or avocado oil spray)

Instructions

  • 1.Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set it aside.
  • 2.In a shallow dish, combine the grated Parmesan cheese, almond flour, garlic powder, paprika, dried oregano, salt, and black pepper. Mix well to create a coating mixture.
  • 3.In a separate bowl, beat the two large eggs.
  • 4.Dip each zucchini fry into the beaten eggs, allowing any excess to drip off.
  • 5.Roll the egg-coated zucchini fry in the Parmesan mixture, pressing gently to ensure the coating sticks.
  • 6.Place the coated zucchini fries on the prepared baking sheet in a single layer.
  • 7.Lightly spray the tops of the zucchini fries with cooking spray to help them crisp up in the oven.
  • 8.Bake in the preheated oven for about 20-25 minutes, or until the zucchini fries are golden brown and crispy.
  • 9.Remove from the oven and let them cool for a few minutes before serving.
