Ingredients
- 2 ripe avocados
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- 1/4 cup chopped fresh cilantro
- 1-2 cloves garlic, minced
- Juice of 1 lime
- Salt and black pepper to taste
- Optional: a pinch of cayenne pepper for some heat
- For Veggie Dippers:
- Bell pepper strips (red, green, or yellow)
- Cucumber slices
- Celery sticks
- Broccoli or cauliflower florets
Instructions
- 1. Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
- 2. Use a fork to mash the avocado to your desired level of smoothness (some prefer it chunky, while others like it smoother).
- 3. Add the diced tomatoes, diced onions, chopped fresh cilantro, minced garlic, and lime juice to the mashed avocado.
- 4. Mix all the ingredients together until well combined.
- 5. Season the guacamole with salt and black pepper to taste. If you like it spicy, you can also add a pinch of cayenne pepper.
- 6. Chill the guacamole in the refrigerator for at least 30 minutes to let the flavors meld together.
- 7. While the guacamole is chilling, prepare the veggie dippers by slicing and chopping your choice of keto-friendly vegetables (bell peppers, cucumber, celery, broccoli, or cauliflower).
- 8. Serve the Keto Guacamole with the veggie dippers as a healthy and delicious snack.
