- 2 large eggs
- 1/4 cup unsweetened almond milk

- 2 large egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted
- A pinch of cayenne pepper
- Salt, to taste
- For the Eggs Benedict
- 4 large eggs (for poaching)
- 4 slices of bacon or ham
- 1 tablespoon white vinegar (for poaching eggs)
- Fresh chives or parsley, for garnish
Instructions
- Prepare the Muffin
- 1.Preheat the oven to 350°F (175°C). Combine almond flour, coconut flour, and baking powder in a bowl.
- 2.In another bowl, whisk eggs, almond milk, and melted butter. Mix wet ingredients into dry ingredients until a dough forms.
- 3.Divide the dough into 4 portions and shape into muffin forms on a baking sheet. Bake for 12-15 minutes or until golden. Let cool and slice in half.
- Make Hollandaise Sauce
- 1.Whisk egg yolks and lemon juice in a heatproof bowl. Gradually add melted butter, whisking constantly, until the sauce thickens. Season with cayenne pepper and salt. Set aside in a warm place.
- Poach the Eggs
