Ingredients

  • For the Low-Carb English Muffins
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons melted butter
  • For the Hollandaise Sauce
  • 2 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • A pinch of cayenne pepper
  • Salt, to taste
  • For the Eggs Benedict
  • 4 large eggs (for poaching)
  • 4 slices of bacon or ham
  • 1 tablespoon white vinegar (for poaching eggs)
  • Fresh chives or parsley, for garnish

Instructions

  • Prepare the Muffin
  • 1. Preheat the oven to 350°F (175°C). Combine almond flour, coconut flour, and baking powder in a bowl.
  • 2. In another bowl, whisk eggs, almond milk, and melted butter. Mix wet ingredients into dry ingredients until a dough forms.
  • 3. Divide the dough into 4 portions and shape into muffin forms on a baking sheet. Bake for 12-15 minutes or until golden. Let cool and slice in half.
  • Make Hollandaise Sauce
  • 1. Whisk egg yolks and lemon juice in a heatproof bowl. Gradually add melted butter, whisking constantly, until the sauce thickens. Season with cayenne pepper and salt. Set aside in a warm place.
  • Poach the Eggs
  • 1. Bring a pot of water to a simmer and add white vinegar. Crack eggs into the water and poach for 3-4 minutes for soft yolks. Remove with a slotted spoon.
  • Cook the Bacon or Ham
  • 1. In a skillet, cook bacon or ham until crispy. Set aside.
  • Assemble the Eggs Benedict
  • 1. Place two muffin halves on each plate. Top each half with a slice of bacon or ham and a poached egg.
  • 2. Drizzle generously with hollandaise sauce and garnish with chives or parsley.
  • 3. Enjoy your Keto Eggs Benedict immediately, basking in the flavors of a gourmet keto-friendly breakfast.
