- 1/2 cup creamy almond butter (unsweetened, with no added sugar)
- 1/4 cup coconut oil (unrefined, virgin)
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons powdered erythritol or a keto-friendly sweetener of your choice
- 1/2 teaspoon pure vanilla extract
- A pinch of salt (optional)
- Keto-friendly chocolate chips or chopped dark chocolate (optional, for decoration)
Instructions
- 1.Combine almond butter and coconut oil in a microwave-safe bowl. Microwave in 20-30 second intervals, stirring in between, until melted and combined.
- 2.Stir in cocoa powder, powdered erythritol, vanilla extract, and a pinch of salt. Mix until smooth and fully incorporated.
- 3.Taste and adjust the sweetness by adding more sweetener if needed.
- 4.A silicone mold or a mini muffin tin lined with mini muffin liners.
- 5.Spoon or pipe the mixture into the molds, filling each cavity almost to the top.
- 6.Optionally, press a keto-friendly chocolate chip or piece of chopped dark chocolate into the center of each fat bomb.
- 7.Refrigerate for 1-2 hours or until firm.
- 8.Remove the fat bombs from the mold or liners. Store in an airtight container in the refrigerator or freezer.
