Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk or coconut milk
  • 1/4 cup full-fat Greek yogurt
  • 1 tablespoon low-carb sweetener (such as erythritol or stevia)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • A pinch of salt
  • Fresh mint leaves for garnish (optional)

Instructions

  • 1. In a mixing bowl, combine the chia seeds, unsweetened almond milk or coconut milk, full-fat Greek yogurt, low-carb sweetener, vanilla extract, and a pinch of salt. Stir well until all ingredients are thoroughly combined.
  • 2. Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency.
  • 3. Before serving, give the Keto Chia Seed Pudding a good stir to ensure an even texture.
  • 4. Top the pudding with fresh mixed berries just before serving. You can also add a few fresh mint leaves for garnish.
  • 5. Enjoy your Keto Chia Seed Pudding with Berries as a satisfying and low-carb breakfast, snack, or dessert.
