- 1/4 cup shredded cheddar cheese
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1 tablespoon chopped fresh parsley (optional)
- Salt and black pepper to taste
- Cooking oil for sautéing (such as olive oil or coconut oil)
Instructions
- 1. Heat a skillet or frying pan over medium heat and add a small amount of cooking oil. Crack the eggs into the skillet, season with salt and black pepper, and cook to your desired level of doneness (scrambled or fried).
