Ingredients

  • 2 large zucchinis
  • 2 ripe avocados
  • 4 slices cooked bacon, crumbled
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh cilantro (optional)
  • Salt and black pepper to taste
  • Lime wedges for serving (optional)

Instructions

  • 1.Preheat your oven to 375°F (190°C).
  • 2.Cut the zucchinis in half lengthwise, and scoop out the seeds and some of the flesh to create boat-like structures. Place them on a baking sheet.
  • 3.In a bowl, mash the ripe avocados until they are smooth. Season with salt and black pepper to taste.
  • 4.Spread the mashed avocado evenly into the hollowed-out zucchini boats.
  • 5.Sprinkle crumbled bacon, diced red onion, diced tomatoes, and shredded cheddar cheese evenly over the avocado-filled zucchini boats.
  • 6.Place the zucchini boats in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and the zucchini is tender.
  • 7.If desired, garnish your Keto Avocado and Bacon Zucchini Boats with chopped fresh cilantro and serve with lime wedges for added flavor.
