Ingredients
- 2 large zucchinis
- 2 ripe avocados
- 4 slices cooked bacon, crumbled
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1/4 cup shredded cheddar cheese
- 1 tablespoon chopped fresh cilantro (optional)
- Salt and black pepper to taste
- Lime wedges for serving (optional)
Instructions
- 1.Preheat your oven to 375°F (190°C).
- 2.Cut the zucchinis in half lengthwise, and scoop out the seeds and some of the flesh to create boat-like structures. Place them on a baking sheet.
- 3.In a bowl, mash the ripe avocados until they are smooth. Season with salt and black pepper to taste.
- 4.Spread the mashed avocado evenly into the hollowed-out zucchini boats.
- 5.Sprinkle crumbled bacon, diced red onion, diced tomatoes, and shredded cheddar cheese evenly over the avocado-filled zucchini boats.
- 6.Place the zucchini boats in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and the zucchini is tender.
- 7.If desired, garnish your Keto Avocado and Bacon Zucchini Boats with chopped fresh cilantro and serve with lime wedges for added flavor.
