- 12 small marinated artichoke hearts
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar (choose a low-carb version)
- Salt and black pepper to taste
- Wooden skewers (about 6 inches long), soaked in water for 30 minutes
