  • 12 cherry tomatoes
  • 12 fresh mozzarella balls (mini size)
  • 12 slices of pepperoni or salami (choose a keto-friendly brand)
  • 12 small basil leaves
  • 12pitted green or black olives (choose keto-friendly olives)
  • 12 small marinated artichoke hearts
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar (choose a low-carb version)
  • Salt and black pepper to taste
  • Wooden skewers (about 6 inches long), soaked in water for 30 minutes

Instructions

  • 1. Start by assembling all your ingredients and draining any excess liquid from the mozzarella, artichoke hearts, and olives.
  • 2. Take a wooden skewer and begin threading your ingredients in the following order: cherry tomato, fresh mozzarella ball, pepperoni or salami slice (folded in half), basil leaf, olive, and marinated artichoke heart. Repeat this pattern until you have filled each skewer.
  • 3. Arrange the finished skewers on a serving platter or tray.
  • 4. Whisk together the extra-virgin olive oil and balsamic vinegar in a small bowl to create a simple vinaigrette—season with salt and black pepper to taste.
  • 5. Drizzle the vinaigrette over the Keto Antipasto Skewers just before serving, or you can dip it on the side.
