  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

  • 4 large ripe tomatoes, sliced
  • 8 ounces fresh mozzarella cheese, sliced
  • Fresh basil leaves
  • Salt and black pepper to taste
  • For the Balsamic Reduction
  • 1/2 cup balsamic vinegar
  • 1 tablespoon keto-friendly sweetener (optional)

Instructions

  • 1.Season chicken breasts with olive oil, salt, pepper, and garlic powder.
  • 2.Preheat the grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side or until fully cooked and juices run clear. Let it rest for a few minutes, then slice thinly.
  • 3.Bring the balsamic vinegar (and sweetener, if using) to a boil in a small saucepan, then reduce heat to low. Simmer until the vinegar thickens and reduces to half its original volume, creating a syrup-like consistency. Let it cool..
  • 4.On a large platter, layer slices of tomato, mozzarella, and basil leaves. Add slices of grilled chicken on top. Season the salad with salt and pepper to taste.
