Ingredients
- 1 1/2 pounds ground beef (preferably lean)
- 1/2 pound ground pork
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup unsweetened almond milk
- 2 large eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8-10 slices bacon (sugar-free for keto)
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a large mixing bowl, combine the ground beef, ground pork, almond flour, grated Parmesan cheese, unsweetened almond milk, eggs, chopped onion, minced garlic, fresh parsley, dried oregano, dried thyme, salt, and black pepper. Mix the ingredients until well combined.
- 3. Form the meat mixture into a loaf shape and place it in a baking dish.
- 4. Lay the bacon slices over the top of the meatloaf, slightly overlapping them to cover the entire surface.
- 5. Bake in the preheated oven for about 45-50 minutes or until the internal temperature of the meatloaf reaches 160°F (71°C).
- 6. If desired, you can broil the meatloaf for an additional 2-3 minutes to crisp up the bacon on top.
- 7. Remove the bacon-wrapped keto meatloaf from the oven and let it rest for a few minutes before slicing.
- 8. Slice and serve your delicious and keto-friendly bacon-wrapped meatloaf.
