- 2 ripe bananas (medium-sized)
- 2 large eggs
- 1/4 cup melted coconut oil
- 1/4 cup unsweetened almond butter
- 1/4 cup low-carb sweetener (such as erythritol or stevia)
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- Chopped walnuts or sugar-free chocolate chips for topping (optional)
Instructions
- 1. Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper for easy removal.
- 2. In a mixing bowl, mash the ripe bananas with a fork until they are smooth and mostly free of lumps.
- 3. Add the large eggs, melted coconut oil, unsweetened almond butter, low-carb sweetener, and vanilla extract to the mashed bananas. Mix these wet ingredients until they are well combined.
- 4. In a separate bowl, combine the almond flour, baking powder, baking soda, salt, and ground cinnamon (if using).
- 5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until a thick batter forms.
- 6. Pour the banana bread batter into the prepared loaf pan, spreading it evenly.
- 7. If desired, sprinkle chopped walnuts or sugar-free chocolate chips over the top of the batter.
- 8. Place the loaf pan in the preheated oven and bake for 50-55 minutes, or until the banana bread is golden brown and a toothpick inserted into the center comes out clean.
- 9. Allow the Almond Flour Banana Bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
