  • 2 ripe bananas (medium-sized)
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened almond butter
  • 1/4 cup low-carb sweetener (such as erythritol or stevia)
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • Chopped walnuts or sugar-free chocolate chips for topping (optional)

Instructions

  • 1. Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper for easy removal.
  • 2. In a mixing bowl, mash the ripe bananas with a fork until they are smooth and mostly free of lumps.
  • 3. Add the large eggs, melted coconut oil, unsweetened almond butter, low-carb sweetener, and vanilla extract to the mashed bananas. Mix these wet ingredients until they are well combined.
  • 4. In a separate bowl, combine the almond flour, baking powder, baking soda, salt, and ground cinnamon (if using).
  • 5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until a thick batter forms.
  • 6. Pour the banana bread batter into the prepared loaf pan, spreading it evenly.
  • 7. If desired, sprinkle chopped walnuts or sugar-free chocolate chips over the top of the batter.
  • 8. Place the loaf pan in the preheated oven and bake for 50-55 minutes, or until the banana bread is golden brown and a toothpick inserted into the center comes out clean.
  • 9. Allow the Almond Flour Banana Bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  • 10. Once completely cool, slice and serve your keto-friendly banana bread. Enjoy!
