In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
Add the minced garlic and ground beef to the pot. Cook, breaking up the beef with a spoon, until it's browned and cooked through.
Drain any excess fat from the cooked beef.
Stir in the chili powder, ground cumin, paprika, and cayenne pepper. Cook for another 2-3 minutes to toast the spices.
Add the diced tomatoes (with juices), tomato sauce, diced green chilies, and beef broth to the pot. Stir to combine..
Season the chili with salt and black pepper to taste. Adjust the seasoning according to your preference.
Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, stirring occasionally.
Taste and adjust the seasoning if needed.
