30g diced bell peppers (any color)
40g diced onions
45g diced tomatoes
25g shredded cheddar cheese
2 slices cooked bacon, crumbled
1tbsp butter or cooking oil
Salt and pepper to taste
Optional toppings: sliced avocado, salsa, sour cream, chopped fresh cilantro

Recipe

    In a skillet, melt the butter or heat cooking oil over medium heat. Add the diced bell peppers and onions. Sauté for 2-3 minutes until they start to soften.

    Push the sautéed vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs with a spatula, incorporating them with the sautéed veggies. Cook until the eggs are no longer runny, stirring occasionally.
