In a large pot or saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
Add the chopped asparagus to the pot and continue to sauté for an additional 5 minutes, stirring occasionally.
Pour in the chicken or vegetable broth and bring the mixture to a simmer. Allow it to simmer for about 15-20 minutes or until the asparagus is tender.
Use an immersion blender or transfer the soup to a regular blender (in batches if needed) and blend until smooth.
Return the blended soup to the pot and place it over low heat.
Stir in the heavy cream and season the Creamy Asparagus Soup with salt and black pepper to taste.
Allow the soup to simmer for an additional 5 minutes, stirring occasionally. Just before serving, sprinkle grated Parmesan cheese over each serving. If desired, garnish with chopped fresh chives for added flavor and presentation.
