  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup keto-friendly pesto sauce (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Grated Parmesan cheese for garnish (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  • 1. Spiralise the large zucchinis to create zucchini noodles (zoodles). Set aside.
  • 2. In a skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  • 3. Add the spiralised zucchini noodles to the skillet with the cherry tomatoes. Sauté for an additional 2-3 minutes, stirring frequently, until the zucchini noodles are just tender. Be careful not to overcook; they should remain slightly crisp.
  • 4. Stir in the keto-friendly pesto sauce and toss to coat the zucchini noodles and cherry tomatoes evenly.
  • 5. Season with salt and black pepper to taste. Adjust the seasoning as needed.
  • 6. If desired, garnish your Zucchini Noodles with Pesto and Cherry Tomatoes with grated Parmesan cheese and fresh basil leaves for added flavor and presentation.
  • 7. Serve your zucchini noodle dish hot as a side or cold as a refreshing keto-friendly meal.
