  • 1/2 cup fresh raspberries, plus extra for garnish
  • 2 tablespoons powdered erythritol or preferred keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • Optional: A few drops of liquid stevia for extra sweetness

Instructions

  • 1. In a mixing bowl, combine the softened cream cheese, powdered erythritol, and vanilla extract. If desired, add a few drops of liquid stevia for additional sweetness. Beat with an electric mixer until smooth and creamy.
  • 2. Gently fold in the fresh raspberries, trying to keep some berries intact for a burst of flavor.
  • 3. Spoon the mixture into silicone molds or drop by tablespoonfuls onto a parchment-lined baking sheet to form bite-sized mounds. Press a whole raspberry into the top of each bite for garnish if you like.
  • 4. Place the molds or baking sheet in the freezer and freeze for 2-3 hours or until the cream cheese bites are firm.
  • 5. Once frozen, remove the Keto Raspberry Cream Cheese Bites from the molds or the baking sheet. Serve immediately as a frozen treat.
