Ingredients
- 2 large eggs
- 2 low-carb tortillas (6-8 inches in diameter)
- 4 ounces cooked breakfast sausage (sugar-free)
- 1/4 cup shredded cheddar cheese
- 2 tablespoons diced bell peppers (any color)
- 2 tablespoons diced onions
- 2 tablespoons diced tomatoes
- 2 tablespoons sour cream (optional)
- Salt and black pepper to taste
- Cooking oil or butter for cooking eggs
Instructions
- 1. In a skillet, heat a small amount of cooking oil or butter over medium heat. Crack the eggs into the skillet and cook them to your preferred doneness, whether it's sunny-side-up, scrambled, or over-easy. Season with salt and black pepper. Remove from heat.
- 2. Heat the low-carb tortillas in a dry skillet for about 10-15 seconds on each side to make them pliable.
- 3. Lay one warm tortilla flat. Place half of the cooked breakfast sausage on one side of the tortilla. Add half of the cooked eggs on top of the sausage. Sprinkle with diced bell peppers, onions, and tomatoes. Finally, sprinkle half of the shredded cheddar cheese over the top.
- 4. Fold the sides of the tortilla in and then roll it up tightly from the bottom, creating a burrito.
- 5. Repeat the assembly process for the second burrito using the remaining ingredients.
- 6. Optionally, top your Low-Carb Sausage and Egg Breakfast Burritos with a dollop of sour cream. Serve immediately.
