Ingredients

  • 2 medium zucchinis, spiralized into noodles
  • 1 large chicken breast, cooked and shredded
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced cucumber
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon chopped fresh basil or parsley
  • 2 tablespoons grated Parmesan cheese (optional)
  • Salt and black pepper to taste

Instructions

  • 1. Spiralise the zucchinis into noodles and set them aside. You can eat them raw or lightly sauté them for 1-2 minutes in a pan if you prefer them softer.
  • 2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper to create a light dressing.
  • 3. In a large bowl, combine the spiralized zucchini noodles, shredded chicken, diced red bell pepper, cucumber, and cherry tomatoes.
  • 4. Pour the dressing over the salad and toss well to coat everything evenly.
  • 5. Sprinkle chopped basil or parsley over the salad for added flavor. Add grated Parmesan cheese if desired.
