- 2 medium zucchinis, spiralized into noodles
- 1 large chicken breast, cooked and shredded
- 1/4 cup diced red bell pepper
- 1/4 cup diced cucumber
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 tablespoon chopped fresh basil or parsley
- 2 tablespoons grated Parmesan cheese (optional)
- Salt and black pepper to taste
Instructions
- 1. Spiralise the zucchinis into noodles and set them aside. You can eat them raw or lightly sauté them for 1-2 minutes in a pan if you prefer them softer.
