For the Grilled Chicken:
2 boneless, skinless chicken breasts
2tbsp olive oil
1tsp dried oregano
1tsp garlic powder
Salt and black pepper to taste
For the Greek Salad:
100g chopped romaine lettuce
60g cucumber, diced
75g cherry tomatoes, halved
25g red onion, thinly sliced
40g Kalamata olives, pitted and sliced
25g crumbled feta cheese
2tbsp extra-virgin olive oil
1tbsp red wine vinegar
1tsp dried oregano
Salt and black pepper to taste

Recipe

  1. 1

    Grill the Chicken:

  2. 2

Preheat your grill to medium-high heat.

  3. 3

In a small bowl, combine the olive oil, dried oregano, garlic powder, salt, and black pepper. Mix to create a marinade.

  4. 4

Brush the chicken breasts with the marinade on both sides.

  5. 5

Grill the chicken breasts for approximately 6-7 minutes per side or until they are cooked through and have grill marks. The internal temperature should reach 165°F (74°C).

  6. 6

Remove the chicken from the grill, let it rest for a few minutes, and then slice it into strips.

  7. 7

    Prepare the Greek Salad:

  8. 8

In a large salad bowl, combine the chopped romaine lettuce, diced cucumber, halved cherry tomatoes, thinly sliced red onion, sliced Kalamata olives, and crumbled feta cheese.

  9. 9

In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the salad dressing.

  10. 10

    Assemble the Salad and Serve:

  11. 11

Drizzle the salad dressing over the Greek salad ingredients.

  12. 12

Toss everything together until the salad is well coated with the dressing.

  13. 13

Divide the Greek salad between two plates.

  14. 14

Arrange the grilled chicken strips on top of each salad.

  15. 15

If desired, garnish with fresh lemon wedges for added flavor. Serve your Keto Greek Salad with Grilled Chicken immediately as a delicious and low-carb meal.
