  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • For the Greek Salad:
  • 2 cups chopped romaine lettuce
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  • Grill the Chicken:
  • 1. Preheat your grill to medium-high heat.
  • 2. In a small bowl, combine the olive oil, dried oregano, garlic powder, salt, and black pepper. Mix to create a marinade.
  • 3. Brush the chicken breasts with the marinade on both sides.
  • 4. Grill the chicken breasts for approximately 6-7 minutes per side or until they are cooked through and have grill marks. The internal temperature should reach 165°F (74°C).
  • 5. Remove the chicken from the grill, let it rest for a few minutes, and then slice it into strips.
  • Prepare the Greek Salad:
  • 1. In a large salad bowl, combine the chopped romaine lettuce, diced cucumber, halved cherry tomatoes, thinly sliced red onion, sliced Kalamata olives, and crumbled feta cheese.
  • 2. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the salad dressing.
  • Assemble the Salad and Serve:
  • 1. Drizzle the salad dressing over the Greek salad ingredients.
  • 2. Toss everything together until the salad is well coated with the dressing.
  • 3. Divide the Greek salad between two plates.
  • 4. Arrange the grilled chicken strips on top of each salad.
