  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon low-carb sweetener (such as erythritol or stevia)
  • 1/2 teaspoon vanilla extract
  • Optional toppings: fresh berries, sliced almonds, or unsweetened whipped cream

Instructions

  • 1. In a mixing bowl, combine the chia seeds, unsweetened coconut milk, unsweetened shredded coconut, low-carb sweetener, and vanilla extract. Stir well to combine all the ingredients.
  • 2. Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or preferably overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency.
  • 3. After the chilling time, give the mixture a good stir. You may need to add a little more coconut milk if it's too thick for your liking.
