  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons powdered erythritol or your preferred keto-friendly sweetener (adjust to taste)
  • 1/2teaspoon peppermint extract (adjust to taste)
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unsweetened shredded coconut (optional, for garnish)
  • A pinch of salt

Instructions

  • 1. Melt the coconut oil in a microwave-safe bowl or on the stovetop until it's completely liquid.
  • 2. Add the unsweetened cocoa powder to the melted coconut oil and whisk until it's well combined and smooth.
  • 3. Stir in the powdered erythritol (or sweetener of your choice), peppermint extract, vanilla extract, and a pinch of salt. Adjust the sweetness and peppermint flavor to your liking.
  • 4. Line a mini muffin tin with paper liners.
  • 5. Pour the chocolate mint mixture into each muffin cup, filling them about 2/3 full.
  • 6. Optional: Sprinkle a small amount of unsweetened shredded coconut on top of each fat bomb for added texture and flavor.
  • 7. Place the muffin tin in the freezer and let the fat bombs set for at least 1-2 hours or until they are firm.
  • 8. Once the fat bombs are solid, remove them from the muffin tin and store them in an airtight container in the freezer.
