  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, with juices
  • 1 can (8 oz) tomato sauce
  • 1 can (4 oz) diced green chilies
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Shredded cheddar cheese for garnish (optional)
  • Sour cream for garnish (optional)
  • Chopped fresh cilantro for garnish (optional)
  • Sliced jalapeños for garnish (optional)
  • Sliced avocado for garnish (optional)

Instructions

  • 1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  • 2. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  • 3. Add the minced garlic and ground beef to the pot. Cook, breaking up the beef with a spoon, until it's browned and cooked through.
  • 4. Drain any excess fat from the cooked beef.
  • 5. Stir in the chili powder, ground cumin, paprika, and cayenne pepper. Cook for another 2-3 minutes to toast the spices.
  • 6. Add the diced tomatoes (with juices), tomato sauce, diced green chilies, and beef broth to the pot. Stir to combine..
  • 7. Season the chili with salt and black pepper to taste. Adjust the seasoning according to your preference.
  • 8. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, stirring occasionally.
  • 9. Taste and adjust the seasoning if needed.
