  • For the Stir-Fry Sauce:
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon Swerve (or your preferred keto-friendly sweetener)
  • 1 teaspoon minced fresh ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon xanthan gum (optional, for thickening)
  • For the Stir-Fry:
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 tablespoons cooking oil (such as avocado or coconut oil)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • Salt and black pepper to taste
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)

Instructions

  • Prepare Stir-Fry Sauce:
  • 1. In a bowl, whisk together the soy sauce (or tamari), rice vinegar, sesame oil, Swerve (or sweetener), minced ginger, minced garlic, and xanthan gum (if using). Set aside.
  • Prepare Stir-Fry:
  • 1. In a large skillet or wok, heat the cooking oil over medium-high heat. Add the chicken strips and cook for about 5-7 minutes until they are no longer pink in the center. Remove the cooked chicken from the skillet and set it aside.
  • 2. In the same skillet, add the sliced red and green bell peppers, broccoli florets, and snap peas. Sauté for about 5 minutes until the vegetables are crisp-tender
  • 3. Return the cooked chicken to the skillet with the sautéed vegetables.
  • 4. Pour the prepared stir-fry sauce over the chicken and vegetables. Stir well to coat everything evenly.
  • 5. If you prefer a thicker sauce, let the stir-fry simmer for a few minutes until it thickens, or you can add a bit more xanthan gum.
  • 6. Season the stir-fry with salt and black pepper to taste. Adjust the seasoning as needed.
  • Serve:
  • 1. If desired, garnish your Keto Chicken and Vegetable Stir-Fry with sesame seeds and chopped green onions for added flavor and presentation.
  • 2. Serve your delicious keto-friendly stir-fry hot as a satisfying and low-carb meal.
