- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon Swerve (or your preferred keto-friendly sweetener)
- 1 teaspoon minced fresh ginger
- 2 cloves garlic, minced
- 1/2 teaspoon xanthan gum (optional, for thickening)
- For the Stir-Fry:
- 1 pound boneless, skinless chicken breasts, cut into strips
- 2 tablespoons cooking oil (such as avocado or coconut oil)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- Salt and black pepper to taste
- Sesame seeds for garnish (optional)
- Chopped green onions for garnish (optional)
Instructions
- Prepare Stir-Fry Sauce:
- 1. In a bowl, whisk together the soy sauce (or tamari), rice vinegar, sesame oil, Swerve (or sweetener), minced ginger, minced garlic, and xanthan gum (if using). Set aside.
- Prepare Stir-Fry:
- 1. In a large skillet or wok, heat the cooking oil over medium-high heat. Add the chicken strips and cook for about 5-7 minutes until they are no longer pink in the center. Remove the cooked chicken from the skillet and set it aside.
- 2. In the same skillet, add the sliced red and green bell peppers, broccoli florets, and snap peas. Sauté for about 5 minutes until the vegetables are crisp-tender
- 3. Return the cooked chicken to the skillet with the sautéed vegetables.
- 4. Pour the prepared stir-fry sauce over the chicken and vegetables. Stir well to coat everything evenly.
- 5. If you prefer a thicker sauce, let the stir-fry simmer for a few minutes until it thickens, or you can add a bit more xanthan gum.
- 6. Season the stir-fry with salt and black pepper to taste. Adjust the seasoning as needed.
- Serve:
