For the Cake
190g almond flour
30g coconut flour
95g erythritol or preferred keto-friendly sweetener
1tsp baking powder
1/2tsp baking soda
1/4tsp salt
2tsp cinnamon
1/2tsp nutmeg
4 large eggs
120ml unsweetened almond milk
60ml coconut oil, melted
2tsp vanilla extract
110g grated carrots (about 2 medium carrots)
50g chopped walnuts or pecans (optional)
For the Frosting
8oz cream cheese, softened
55g butter, softened
60g powdered erythritol or to taste
1tsp vanilla extract

Recipe

    Preheat your oven to 350°F (175°C) with grease and flour (with coconut flour) for two 8-inch round cake pans.

    In a large bowl, whisk together almond flour, coconut flour, erythritol, baking powder, baking soda, salt, cinnamon, and nutmeg.

    In another bowl, beat the eggs, almond milk, melted coconut oil, and vanilla extract until well combined.

    Gradually add the wet ingredients to the dry ingredients, stirring until combined. Fold in the grated carrots and optional nuts.

    Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes clean. Let the cakes cool in the pans for 10 minutes, then turn them onto wire racks to cool completely.

    Beat the cream cheese and butter together until smooth. Gradually add powdered erythritol and vanilla extract, beating until creamy and spreadable.
