Ingredients
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons ghee or unsalted butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1inch piece of fresh ginger, grated
- 1/4 cup tomato paste
- 1 cup heavy cream
- 1/4 cup plain Greek yogurt (full-fat)
- 1 teaspoon garam masala
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2teaspoon chili powder (adjust to taste)
- Salt and black pepper to taste
- Chopped fresh cilantro for garnish (optional)
- Cauliflower rice or keto-friendly naan for serving (optional)
Instructions
- 1. In a large skillet or pan, heat the ghee or butter over medium-high heat.
- 2. Add the chopped onion and sauté until it becomes translucent, about 2-3 minutes.
- 3. Stir in the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
- 4. Add the tomato paste and continue to cook, stirring, for about 2 minutes to cook off the raw taste of the tomato paste.
- 5. Season the chicken pieces with salt and black pepper. Add them to the skillet and cook until they are browned on all sides, about 5-7 minutes.
- 6. Reduce the heat to medium-low and add the heavy cream, Greek yogurt, garam masala, ground turmeric, ground cumin, paprika, and chili powder. Stir well to combine all the ingredients.
- 7. Simmer the mixture for about 10-15 minutes, allowing the flavours to meld and the chicken to cook through. Adjust the seasoning with additional salt and black pepper if needed.
- 8. Garnish the Keto Butter Chicken with chopped fresh cilantro if desired.
- 9. Serve hot with cauliflower rice or keto-friendly naan for a satisfying and low-carb dinner.
