180g fresh broccoli florets
40g diced onions
2 cloves garlic, minced
475ml chicken broth
250ml heavy cream
100g shredded cheddar cheese
2tbsp butter
Salt and black pepper to taste

Recipe

    In a pot, melt the butter over medium heat. Add the diced onions and minced garlic. Sauté for 2-3 minutes until onions are translucent.

    Add the fresh broccoli florets to the pot and sauté for another 2-3 minutes.

    Pour in the chicken broth and bring the mixture to a simmer. Let it cook for 10-15 minutes or until the broccoli is tender.

    Use an immersion blender or transfer the mixture to a blender (in batches if needed) to puree until smooth.

    Return the pureed mixture to the pot. Stir in the heavy cream and cook for an additional 5 minutes over low heat.
