Ingredients
- 1/2 cup unsweetened shredded coconut
- 2 tablespoons coconut oil (melted)
- 2 tablespoons almond butter (unsweetened)
- 1 tablespoon powdered erythritol (or your preferred keto-friendly sweetener)
- 1/2 teaspoon pure vanilla extract
- 12 whole almonds (raw or toasted)
- 2 ounces sugar-free dark chocolate (chopped or in chip form)
Instructions
- 1. In a mixing bowl, combine the unsweetened shredded coconut, melted coconut oil, almond butter, powdered erythritol, and pure vanilla extract. Mix well until you have a cohesive mixture.
- 2. Taste the mixture and adjust the sweetness to your preference by adding more powdered erythritol if needed.
- 3. Take a small amount of the mixture (about a tablespoon) and flatten it in your hand to form a small disc. Place a whole almond in the center.
- 4. Mold the mixture around the almond to form a fat bomb shape. Repeat this process to make 12 fat bombs.
- 5. Place the formed fat bombs on a baking sheet or plate lined with parchment paper.
- 6. In a microwave-safe bowl or using a double boiler, melt the sugar-free dark chocolate until smooth.
- 7. Carefully dip each fat bomb into the melted dark chocolate to coat it entirely. Place the coated fat bombs back on the parchment paper.
- 8. Once all the fat bombs are coated, refrigerate them for about 10-15 minutes or until the chocolate has set.
