- 2 tablespoons olive oil
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes (with no added sugar)
- 1 cup chicken or vegetable broth
- 1/4 cup heavy cream
- 2 tablespoons tomato paste
- 1 teaspoon dried basil
- Salt and black pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- 1. In a large pot or saucepan, heat the olive oil over medium heat. Add the diced onions and minced garlic. Sauté for about 3-4 minutes until the onions become translucent.
- 2. Pour in the diced tomatoes (with their juices) and chicken or vegetable broth. Stir to combine.
- 3. Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld and the tomatoes to soften.
