- 2 cups fresh broccoli florets
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- 1/4 teaspoon nutmeg
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- 1. Cut the fresh broccoli florets into small pieces. Set aside.
- 2. In a large pot or saucepan, melt the butter over medium heat. Add the diced onions and minced garlic. Sauté for about 3-4 minutes until the onions become translucent.
- 3. Add the chopped broccoli to the pot and stir to combine with the onions and garlic.
- 4. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Allow it to simmer for about 15-20 minutes or until the broccoli is tender.
- 5. Use an immersion blender or transfer the soup to a regular blender (in batches if needed) and blend until smooth.

- 7. Stir in the heavy cream and shredded cheddar cheese. Continue to heat and stir until the cheese is fully melted and the soup is creamy.
- 8. Season the Creamy Broccoli and Cheddar Soup with nutmeg, salt, and black pepper to taste. If desired, garnish with chopped fresh parsley for added flavor and presentation.
