For the Low-Carb English Muffins
95g almond flour
2tbsp coconut flour
1tsp baking powder
2 large eggs
60ml unsweetened almond milk
2tbsp melted butter
For the Hollandaise Sauce
2 large egg yolks
1tbsp lemon juice
110g unsalted butter, melted
A pinch of cayenne pepper
Salt, to taste
For the Eggs Benedict
4 large eggs (for poaching)
4 slices of bacon or ham
1tbsp white vinegar (for poaching eggs)
Fresh chives or parsley, for garnish

    Prepare the Muffin

    Preheat the oven to 350°F (175°C). Combine almond flour, coconut flour, and baking powder in a bowl.
