Cut each mozzarella string cheese stick in half to create smaller sticks.
Mix the almond flour, Italian seasoning, garlic powder, paprika, salt, and black pepper in a shallow bowl.
In another shallow bowl, beat the eggs until well-mixed.
Dip each mozzarella stick into the beaten eggs, ensuring it's evenly coated.
Roll the egg-coated mozzarella stick in the almond flour mixture, pressing the coating onto the cheese to adhere.
Repeat the process by dipping the coated stick back into the beaten eggs and rolling it in the almond flour mixture. This double coating ensures a crispy exterior.
Place the coated mozzarella sticks on a plate or tray and freeze them for 30 minutes. This helps set the coating and prevents the cheese from melting too quickly during frying.
Heat cooking oil in a deep fryer or a deep skillet to 350°F (175°C).
Carefully place the frozen mozzarella sticks into the hot oil, a few at a time, and fry until golden brown and crispy, usually 2-3 minutes.
