In a microwave-safe bowl, melt the coconut oil in 20-30 second intervals until it becomes a liquid.
In a separate mixing bowl, combine the melted coconut oil, natural peanut butter, unsweetened cocoa powder, powdered erythritol (adjust to taste), pure vanilla extract, and a pinch of salt. Mix until all the ingredients are well combined and the mixture is smooth.
Line an 8x8-inch (20x20 cm) square baking dish with parchment paper, leaving some overhang on the sides for easy removal.
Pour the peanut butter and chocolate mixture into the prepared baking dish. Use a spatula to spread it out evenly.
Place the baking dish in the refrigerator and chill for at least 1-2 hours, or until the mixture has solidified.
Once the bars have set, use the parchment paper overhang to lift them out of the dish. Place them on a cutting board and cut into 12 even bars.
Store the Keto Peanut Butter Chocolate Bars in an airtight container in the refrigerator to keep them firm. You can also freeze them for longer storage.
