4 boneless, skinless chicken breasts
1tbsp olive oil
55g cream cheese (full-fat)
25g crumbled feta cheese
40g chopped sun-dried tomatoes
2 cloves garlic, minced
1/4tsp red pepper flakes (optional)
25g shredded mozzarella cheese
Salt and black pepper to taste
Fresh basil for garnish (optional)

    Preheat your oven to 375°F (190°C)

    Butterfly the chicken breasts by slicing them horizontally but not all the way through, creating a pocket. Season both sides with salt and black pepper.
