Prepare a baking sheet or tray lined with parchment paper.
In a microwave-safe bowl, combine the sugar-free dark chocolate chips or chunks with the coconut oil.
Microwave in 20-second intervals, stirring in between, until the chocolate is completely melted and smooth. Be careful not to overheat.
If you prefer a sweeter chocolate coating, you can add a keto-friendly sweetener to the melted chocolate, to taste. Mix well to combine.
Hold a washed and dried strawberry by its green stem and dip it into the melted chocolate mixture, coating it evenly. You can use a spoon to help spread the chocolate over the strawberry.
Allow any excess chocolate to drip off, and then place the chocolate-covered strawberry onto the prepared parchment-lined baking sheet.
Repeat this process with the remaining strawberries.
If desired, you can dust the chocolate-covered strawberries with unsweetened cocoa powder for added flavour and presentation.
Place the baking sheet with the chocolate-covered strawberries in the refrigerator for about 10-15 minutes to allow the chocolate to set.
