2 medium zucchinis, grated
25g almond flour
25g grated Parmesan cheese
5g chopped fresh parsley
2 cloves garlic, minced
1 large egg
Salt and black pepper to taste
Cooking oil (such as olive oil or coconut oil) for frying

Recipe

    Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

    In a mixing bowl, combine the grated zucchini, almond flour, grated Parmesan cheese, chopped fresh parsley, minced garlic, and a large egg. Season with salt and black pepper to taste. Mix until all ingredients are well combined

    Heat a skillet or frying pan over medium heat and add a small amount of cooking oil to coat the bottom.

    Take a spoonful of the zucchini mixture and drop it into the hot skillet. Flatten it slightly with the back of the spoon to form a fritter. Repeat to make more fritters, leaving some space between them in the pan.
