Ingredients

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to your preferred level of spiciness)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup hot sauce (choose a keto-friendly brand)
  • Salt and black pepper to taste
  • Ranch or blue cheese dressing for dipping (optional)
  • Celery sticks for serving (optional)

Instructions

  • 1.Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • 2.In a large mixing bowl, combine almond flour, grated Parmesan cheese, garlic powder, paprika, cayenne pepper, salt, and black pepper. Mix well to create your breading mixture.
  • 3.In a separate bowl, beat the eggs.
  • 4.Dip each cauliflower floret into the beaten eggs, allowing any excess to drip off.
  • 5.Roll the egg-coated cauliflower in the breading mixture until it's evenly coated. You can press the breading mixture onto the cauliflower to make it stick better.
  • 6.Place the coated cauliflower florets on the prepared baking sheet in a single layer.
  • 7.Bake in the preheated oven for about 20-25 minutes or until the cauliflower is tender and the breading becomes crispy and golden brown.
  • 8.While the cauliflower is baking, make the buffalo sauce. In a small saucepan, melt the unsalted butter over low heat. Stir in the hot sauce and mix until well combined. Remove from heat.
  • 9.Once the cauliflower is done baking, transfer it to a large mixing bowl.
  • 10.Pour the buffalo sauce over the baked cauliflower and toss to coat the cauliflower evenly with the spicy sauce.
  • 11.Serve your Spicy Keto Buffalo Cauliflower Bites with ranch or blue cheese dressing for dipping and celery sticks on the side, if desired.
