Thinly slice the pork loin or tenderloin. Season it with salt and black pepper to taste.
Bring a pot of water to a boil and blanch the broccoli florets for about 2 minutes until they are slightly tender but still crisp. Drain and set aside.
In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and ginger paste (or minced fresh ginger) and sauté for about 30 seconds until fragrant. Add the thinly sliced pork and cook for about 2-3 minutes until it's browned. Remove the pork from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onions. Sauté for about 2-3 minutes until they begin to soften.
Return the cooked pork to the skillet and add the blanched broccoli florets.
In a small bowl, mix the soy sauce with xanthan gum (if using). Pour the sauce over the pork and broccoli.
Stir-fry the ingredients for an additional 2-3 minutes, allowing the sauce to thicken and coat the pork and vegetables evenly.
If desired, garnish your Keto Pork and Broccoli Stir-Fry with sesame seeds and sliced green onions for added flavour and presentation.
