1lb pork loin or tenderloin, thinly sliced
180g broccoli florets
25g sliced bell peppers (any color)
25g sliced onions
2 cloves garlic, minced
2tbsp soy sauce (or tamari for a gluten-free option)
1tbsp olive oil
1/2tsp ginger paste or minced fresh ginger
1/2tsp xanthan gum (optional, for thickening the sauce)
Salt and black pepper to taste
Sesame seeds for garnish (optional)
Sliced green onions for garnish (optional)

Recipe

    Thinly slice the pork loin or tenderloin. Season it with salt and black pepper to taste.

    Bring a pot of water to a boil and blanch the broccoli florets for about 2 minutes until they are slightly tender but still crisp. Drain and set aside.

    In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and ginger paste (or minced fresh ginger) and sauté for about 30 seconds until fragrant. Add the thinly sliced pork and cook for about 2-3 minutes until it's browned. Remove the pork from the skillet and set aside.
